After having sampled all the restaurants at the Four Seasons in Wailea, we started venturing out and decided on the Restaurant at Hotel Wailea, a relatively new restaurant in the area under up and coming Chef Zach Sato.
The hotel is situated a quick 5-10 minute drive from the beach, but had a great relaxed and refined atmosphere with stunning views. We were lucky to have just arrived at sunset.

I arranged a tasting menu since we were celebrating our anniversary and wanted something special for MsFlamingo. Chef Sato had a great sampling arranged.
We brought a bottle of 2001 Spring Mountain, one of our favorites that drinks almost like a Pauillac and got it decanting as soon as we sat down.
While the wine decanted, I started with a gin based cocktail that was fresh and more on the savory side, great start to the meal.
Next up, a beautiful tray of amuse bites, starting with Kusshi oyster with a great vinaigrette, a crispy roll of kampachi and cream (I could've ate a basket of these), and fresh ahi poke on a crispy cracker.
Some fresh baked balls/loaves of bread with fresh butter.
Next up was a stunning Ahi tataki seared over crispy brioche and a generous topping of Burgundy truffles - absolutely amazing!
The next dish was a very fresh and perfectly prepared opakapaka with some seared spinach and a great dashi style broth.
We had a bit of an intermezzo before the main course of raspberry and lychee intermezzo, fresh and did its job of palate cleansing.
The next course was incredibly fun and tasty. Fresh shrimp in a tempura batter with green garlic crepes to wrap everything up and enjoy like a taco. I could've had a huge platter of this.
Then for our main/s, I had the SRF wagyu beef cap which was tasty and had some of the unctuousness of Japanese wagyu. The sauce of cauliflower were great with the dish.
Since MsFlamingo finds wagyu too rich, she had filet which was also excellent.
For dessert there was a deconstructed sweet potato cheesecake, an elegant way to end the meal and we appreciated it not being too sweet after so many courses.
After our excellent meal, we headed to the lobby to wait for our hotel car while a quick downpour added to the relaxed tropical atmosphere.
We had an absolutely fantastic time at the Restaurant at Hotel Wailea, Chef Sato is doing great stuff and this is the only true fine dining on Maui. We loved it so much that we decided to come back for our final night.
