Also at the recommendation of our family friends in Zurich for best paella was Escriba on the waterfront. Note when you search for it, it's name is Xiringuito Escriba.
The location is directly on the waterfront and opens for lunch at 1pm.

Since we didn't have reservations, we sat a little further back, but it wasn't an issue, still amazing views.
They had several paella options, but we went with the Escriba special.
Once you order and they start making your paella, they bring an hour glass to let you know how long the cooking process takes.
We started with some grilled calamari, perfectly prepared.
I had to go over and take a picture of the paella cooking station. As each order comes in, they pour broth over the rice and later add in the appropriate seafood closer to when it's done.
Finally when your paella is ready, they bring it to the table with a fantastic presentation.
What a beauty! I will say I am actually not a paella fan, it normally doesn't do anything for me. This however was different. The rice was incredibly flavorful and had great texture. The broth they use was incredible and the reduction of it was fantastic. The seafood consisting of clams, mussels, langoustines and prawns were all incredibly fresh.
As someone who isn't a paella fan normally, I would come back to Escriba anytime and highly recommend it as a stop to anyone traveling to Barcelona.
